Btw, I just listened to the podcast--at the gym, no less. It just got me thinking about what an exceptionally beautiful and powerful object a potato is. Did you know they originate in the Andean region of South America? And yet they have come to define the culinary destinies of countries as distant as Russia, Ireland, and Belgium. In southern Chile and especially the island of Chiloé, there are enough varieties of potatoes to send your mind spinning. So they don't need to be boring.
Aren’t they extraordinary. A world-historical vegetable. I’ve been playing with the idea of writing an entire book about potatoes. That would of course require a trip to Chile! And that is a great tip about Chiloé - I didn’t know that.
That's something I would read--let me know if you ever come down and need a potato guide. Btw--I'm trying to revive this Substack and have a post coming out tomorrow about Milei and cryptocurrencies. Would be honored if you bother to take a look.
I read a science fiction novel about the discovery of an earth like planet light years off. Their life forms were dependent on silicon polymers instead of carbon polymers. Life was simpler there, because it was less complicated chemically.
Hey, man! Glad to see you're doing well and still thinking about potatoes.

Would silicon life forms eat potatoes?
